St. Patty's Day Muffins


Baking happens at Nana's & Papa's but sometimes it's on my agenda. I've been wanting to try this recipe for Sweet Spinach Muffins for a few days and took some time today to change the recipe to match my jam (gluten free, dairy free). I may try to make them without eggs later this week.

St. Patty's Day Muffins

Makes 18 muffins

Ingredients:

Dry:

2 cups gluten free all purpose flour

1 1/2 tsp cinnamon

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Wet:

3/4 cup unsweetened coconut milk

1/2 cup honey

1 large banana

6 oz spinach

1/2 cup coconut oil

1 large egg

1 tsp vanilla extract

Directions:

1. Preheat oven to 350F.

2. Mix together dry ingredients in one bowl.

3. Blend wet ingredients in a blender (I used a stick blender) until well-blended.

4. Pour wet ingredients into dry ingredients and gently mix together.

5. Divide batter into muffin pan/cupcake liners. Bake for 18-22 minutes.

6. Cool completely.
