The best part about this dinner is that it’s so simple to make. Just a few ingredients, and you’ve got a meal that’s filling without pushing your meal plan all out of whack!

One Week at a Time

Finding a new meal each night after a long day with the kids or at the office can often be the straw that breaks the camel’s back. Instead of scrambling to find ingredients and inspiration, plan the week out in advance! You don’t have to make up every meal and have it waiting in the freezer but you can organize it in a number of different ways to make it more accessible throughout the week. Write down what each meal will be, the ingredients you’ll use, and gather them together as much as possible to make it easy to grab it all!


A Little Goes a Long Way

If you’re planning to make several chicken meals or dinners with ground beef, you can make up a large batch in advance and tuck it away in the freezer! Rather than spending your precious time stirring up another batch of browned hamburger that will be transformed into sloppy joes, spaghetti sauce, or tacos, make several pounds of it early on in the week. Freeze it into containers that are easy to see and have been measured out and then pull them out when you need them.


Invest in Efficient Recipes

It might seem like a no-brainer, but investing in a cookbook or menu planner that’s geared toward simple, easy-to-cook meals is a great way to cut down on time. You might have an idea in the back of your mind about how you want the meal to look but tracking down an exact recipe or one that’s like the one you want can take time. Having a simple recipe book handy can be a huge time saver!


Steak Tips with Caramelized Onions

This simple recipe is an easy weeknight dinner for everyone!


Ingredients:

  • 3 tablespoons grass-fed butter or coconut oil, divided

  • 2 large yellow onions, thinly sliced

  • sea salt, garlic powder, and black pepper to taste

  • 1 pound beef tenderloin or ribeye steak, sliced into 1” cubes

Start by warming up a large skillet on medium-low heat on your stovetop. Drop 2 tablespoons of butter into the skillet and let it melt.


Once the skillet and butter are hot, add the onions. Cook, stirring occasionally, for 5 minutes or until the onions are translucent.


Reduce the heat in the skillet to medium-low heat and cover the pan. Cook for 30 minutes, stirring occasionally to scrape the bottom of the pan, or until rich golden brown and very tender. Transfer this vegetable mixture out and to a bowl and keep it warm.


Return the pan to the heat and add the remaining tablespoon of butter to the skillet. Once it’s hot again, add the sliced steak tips and season them to taste. Sear them undisturbed for 3 minutes or until golden brown underneath. Flip the tips over and cook until the other side is also golden brown.


Remove from heat then stir in the onions.


Serve with your favorite sides.


Alternatives:

Switch up the type of steak you use to keep the calories low and fat at a minimum. Instead of butter, you can opt for coconut oil or other low-fat choices.


Storage:

Keep your steak tips and onions in the fridge for up to a week! This is a protein-packed meal that makes a great choice to take to work or for a snack later on in the evening.
