So many people are breaking out their baking gear in this time of lockdown. And a couple of weeks in, we've all probably eaten too many cookies and loaves of bread! Time to enjoy something healthier! I made this Pumpkin Oat Bake the other day and everyone really enjoyed it - especially warm right out of the oven.
The original recipe at https://therockyroadhomestead.home.blog/2019/11/03/pumpkin-oat-bake-recipe-off-grid-with-doug-stacy/ made two HUGE pans of it - which was great for us, with 10 family members. I cut the recipe in half to make it more reasonable for most folks to make.
